Gourmet Dinner in 6 Easy Steps

I think you guys know as well as I do that I love an EASY meal. So here's another easy one you can accomplish in just 6 steps and impress all of your friends! 

 
Step One: get out a cookie sheet, grease it, and turn on the oven to 350 degrees. This totally counts as one step btw. 

Step Two: put a few pieces of bread on the greased cookie sheet. I didn't take a picture of this because I figured if I can manage this, you can too with or without images. 

Step Three: put a spoonful of pizza sauce on each piece of bread. 


Step Four: add some mozzarella cheese. I would tell you how much, but seriously, you can't go wrong with too much cheese. 


Step Five: slap a few pepperonis on top. 


Step Six: bake in the oven for about 15 minutes. Or longer if you like your toast burnt. But eww. 

And then put those bad boys on some of your finest china. That doesn't count as a step, because technically you could eat right off the cookie sheet and I wouldn't judge... 



Modifications
-try sprinkling some Italian seasoning on top of the cheese. Yeah, I know it requires an extra step, but when you want to get uber fancy, this will do the trick!
-add some healthy stuff, like spinach or tomatoes or pineapple. 
-substitute white  bread for wheat bread or English muffins, yum! 

Fail:
Fooled you! You can't fail at this! Unless you don't mind me with the whole 15 minutes and you burn your bread and set your smoke alarms off. But this would never happen to anyone, right?

Dirty Truth: Day 5

Oh, you remember when I started the Dirty Thirty series for my 30th birthday?  Well since my 31st birthday is coming up in around 2 months, I guess I should work on that.  Oops.


I don't have an official bucket list, but there are many things I hope to get accomplished in my lifetime.

Travel.  I hope one day I can fill my passport with all types of locations.  But I would also love to travel across the US in an RV and explore the wonderful places that America has to offer.  I would love to travel to Italy and explore the whole country: the wine, the food, the historic buildings, the romance, the language.  In the US, I hope to visit Seattle, Charleston, South Carolina, NYC, and Vegas (again). Luckily, I will be traveling to NYC this September to present a research paper at the annual AAPA Conference!  But I'm still trying to raise the money to afford the trip.  So if you can spare $5, you would be helping me reach my goal!


Family.  I've been married before, and while my marriage failed, I loved being married.  I want to get married again and spoil my husband in the typical degrading woman type fashion (cooking, cleaning, etc).  Sorry all you feminists out there!  I would also love to extend our family with at least one kid - ideally I would love twins!  I want daily family dinners and weekly family activities like bowling or hiking..

Rescue.  I was involved in dog rescue for multiple years and I fell in love with it.  I love dogs and I love helping them because they are so dependent on their humans.  One of the best feelings in the world is rescuing a dog and changing his/her life by simply giving them attention, food, and toys.  I picture building kennels in a big backyard and housing stray dogs.  I think stray dogs found alongside the highway is heartbreaking.  I want to have a safe place to keep them until the family is found or until they can find new forever homes (and always spay/neuter them!)


Career.  I want to find a career that I love and will be able to start my 401(k).  I picture flexible hours, holidays and weekends off to spend with my family, co-workers I love, and a nice paycheck.  Isn't that everyone's dream?!  I chose to go to graduate school because I love pathology and how you can help patients (without actually seeing patients) and a career as a pathologists' assistant has the possibility of being all those things I want.  I have one year left before I graduate with my master's degree and then I will just have to find the perfect place to work!

I may not have any crazy things I want to get done in my lifetime, but I just want a happy, secure life and I want to be able to give back to the community and help people.  And if I can go sky-diving or bungee jumping while I'm traveling to exotic locations, I will definitely accept that!

Cha-cha-changes

I have been wanting to get my hair done for MONTHS. Since I am on a very strict budget, #gradstudentproblems, I decided to try the Aveda Fredric's Institute. It is a full-time beauty school where you pay great prices for services, but students are doing your hair. I admit, I was a little nervous at first, but I was overall very pleased!


You might not be able to tell a big difference in these pictures, but I got all over black color, a trim, a panel of red highlights, and BANGS! I have never had bangs in my adult life. So I'm sure I will be joining the droves of women with "bad bang days".


I LOVE IT.  I've always preferred my hair black and I love the bangs and red streak.  The prices were great and overall experience at Aveda was great too.  I got to go in the blue relaxation room where you lay on down on a massage table while you get your hair washed.  I also got a facial and scalp massage!

There were a few drawbacks - like my eyebrows weren't waxed very cleanly and I ended up with quite a bit of dye on my face.  And one of the teachers actually cut my bangs so it made it less scary. Overall, I would definitely recommend as long as you're not getting something overly complicated.

Since this post is titled "Cha-cha-changes" (does anyone else have that David Bowie song stuck in their head now? You're welcome), I wanted to share some new things I've tried lately.

Menards.  I had never seen one of these stores before moving to Indiana, so I had to go see what it was all about. This place is by far one of the weirdest stores I've ever been in (The Christmas Tree Shoppes is definitely in the top 5).  I was standing in the dog supplies aisle, next to a cooler of milk, across from storm doors. It was like a Lowe's with groceries. BIZARRE.  Has anyone been to a Menards?  Did you like it?

Sushi Boss. I always get nervous about trying out new sushi places, but when I found out this restaurant offered create-your-own sushi, I was there on opening day.  Okay, day after opening day. You're able to choose seaweed or soy paper, one protein, and up to 3 additional ingredients.  I chose soy paper with spicy crab, cucumber, strawberries, and topped with spicy mayo.  Yeah, you read that right.  STRAWBERRIES.  It was delicious!  I think my next one will have strawberries with mandarin oranges and cream cheese... The prices were great and the ingredients are super fresh! If you come to Indy, hit me up so we can have a sushi blate.

Crafting projects.  Since I had 2 weeks off of school, I have started a lot of new crafting projects.  Hopefully I will finish them soon and be able to post them on le blog sooner than later.  While in the crafting section, I saw this colored mod podge.  The display showed colored mason jars along the top.  Can this trend stop now?  Remember when I tried to do it?  Well I have colored mod podge now! #winning

Infused water.  I've tried this before, but apparently was doing it all wrong.  When I found this mug in the clearance section of Wal-mart, I immediately knew it was better than smashing strawberries and drinking bits of them the rest of the day.  My first concoction included lemon, cucumber, and mint.  And it was delicious!  Something about good digestion and immune system or something.

I also think the blog needs a new design.  If you know any awesome cheap designers, let me know! What new things have you tried recently?

Pinteresting: Easy Sausage, Egg, & Cheese Muffins


Yes, I said easy. What's even easier is that you can make 12 of these at a time (preferably on Sunday night), eat one fresh out of the oven (because duh), put 5 in the fridge for the upcoming week, and the rest in the freezer for next week!

I found this recipe and thought it was perfect for my early mornings. I always eat my breakfast in the car with my coffee on the way to work or school in the mornings. Actually sitting down and eating something would require me not to hit snooze 5 times... and that's just not happening.

The original recipe calls for so many spices and ingredients, but I wanted to make this EASY. So with 3 ingredients and a handful of spices, I have breakfast for the entire week!  The original recipe states each muffin is only 150 calories and the recipe is gluten free! But who's really counting?

Original PIN: Cheddar Egg Muffins

I bought a "tube" of sausage, which kinda freaked me out a little because raw meat terrifies me, but I just put it in a skillet and browned it like ground beef. I used a metal spatula to help me chop the pieces into smaller segments to ensure it would cook fully and so I could easily season and mix it with the cheese and egg. 


I added salt, pepper, minced onion, garlic powder and Italian seasoning to the sausage once it was almost cooked. The Italian seasoning already has rosemary, sage, basil, oregano, and thyme. I didn't measure anything (oops), but just added the seasoning as needed. 


While the sausage cooked, I put 1 1/2 cups cheese in a large bowl and 8 eggs in another bowl and whisked. After fully cooking the sausage, I drained the grease and let cool. Then I combined all the ingredients into a large bowl. 


I used muffin liners because I hate washing dishes. But since I didn't spray the liners with cooking spray, the muffins stuck horribly. (#FAIL) So I wouldn't recommend muffin liners because I had to peel them off.  Just make sure to use cooking spray either way! You can fill each cup to the brim (it will not expand) and bake for 25-30 minutes!



Ingredients: 
1 lb sausage 
1 teaspoon salt 
1 teaspoon pepper 
1 tablespoon minced onions
1/2 teaspoon garlic powder 
2 tablespoons Italian seasoning 
1 1/2 cup shredded cheese 
8 large eggs 

Directions:
1. Preheat oven to 350 degrees. Spray muffin tins/liners with cooking spray. 

2. Brown sausage in skillet over medium heat. Add all seasonings when browned (everything except cheese and eggs). 

3. Drain grease and remove from heat. 

4. Whisk eggs in a small bowl. Add cheese to separate large bowl. 

5. Once sausage is cooled, add to cheese bowl and mix. Then add eggs to cheese/sausage mixture and mix. 

6. Fill muffin tins equally with sausage mixture. 

7. Bake for 25-30 minutes or until baked all the way through (toothpick comes out clean). 

8. Cool muffins completely before refrigerating or freezing leftovers.


Healthy options: 
-Use turkey sausage instead of regular sausage 
-Add broccoli or spinach to mixture before adding to muffin cups.

Fail:
I didn't spray my muffin liners with cooking spray.  Ergo, I think I ate some paper with my muffins because they were a complete pain in the arse to get off. My suggestion:  don't use muffin tin liners.

#Profiling

So today was just a typical day.


Has anyone ever gotten a color sensitivity test done at a salon before your hair appointment?  Yeah, me either.  But the Aveda Frederic Institute requires one before getting any color done at their salon.  So I stopped by today to get this "test" and she stuck some goop on a band-aid, stuck it to my arm, and told me to keep it there for 2-3 hours.

Actually, she said, "just check it and make sure there's no itching or anything... well you know, you're an RN."

I just nodded in agreement because explaining to someone that I am in fact NOT a nurse and explaining why exactly I'm wearing scrubs is way harder than just agreeing.  But why does every woman in scrubs automatically have to be a nurse? #profiling (shout out to all the nurses reading this! I totally couldn't do your job!)

And since I was in the mall, I HAD to shop.  Bath & Body Works is having a great sale and send me coupons for free stuff.  And I like free stuff.  So I immediately headed that direction.  When I got to the store, the associate was telling me about their "buy 3, get 3 free" (like I said, great sale) and then said, "well since you are in the healthcare profession, you probably want to check out the hand sanitizer."  #profilingagain  Thanks B&BW, but I came for the free stuff.

On the way home, I got behind this truck loaded up with a lot of appliances.  I didn't think much about it until this happened:

What a genius.  Doesn't he know that Fridge Moving 101 requires taping the doors shut?  Holy heart attack.

Once I got home, I attempted to complete a blood glucose curve (testing blood sugar every 2 hours for an entire day) on my minpin Crimson.  She's diabetic (obvi) and needs a new insulin prescription so the vet asked me to just do the curve at home.  And I've been trying to get blood from this little shit diva since Friday!  I've tried her ear, inner lip, and her ankle paw pad.  When I actually get blood, she is screaming and moving so much that she smears it all over me.  Or she waits until I try to get the test strip next to the pretty little bead of blood to squirm just enough to get an error message. *curse words*  But after sticking her 3 times today, I finally got one reading!

Holy diabetes.  Maybe I will be able to get another reading in 2 hours... fingers crossed.

What's new in the neighborhood?

Hey guys, remember me?

Yeah I haven't written anything in oh... 5 months. Oops.

Since I've been absent from blog world, don't think I haven't done anything exciting, because I have! (Kind of) I have completed the spring semester AND 2 summer classes. Only 10 months and 25 days left until I graduate! (Not that I am counting or anything...) 

I just finished  my second summer class - forensics & autopsy. I'm assuming this is when all of you guys shudder and/or gag. But it was a killer experience. No? Inappropriate? 

Besides school stuff, I have:

-Read multiple books on my Kindle. Welcome back my friend, oh I have missed you! I signed up at the Indianapolis Public Library so I can read all the new books I've been dying to read... for free!  Support your public libraries!  I'm also taking any reading suggestions!

-Laid by the pool (hello summer!) studying, reading my Kindle, and getting sunburnt. Don't be like me and forget to put sunblock on your legs. Getting blisters can double your chances of getting melanoma. Yikes! 

-Volunteered for multiple different causes. I think when you're in a new city, volunteering is a great way to get involved, learn more about the area, and meet new people. Plus, it's free to attend the activities when you can't afford entry fees! Below are pictures from the IUPUI campus walk Out of the Darkness for the American Foundation for Suicide Prevention and Outrun the Sun 5K for melanoma awareness.

-Eaten lots of sweets. I'm definitely a stress eater. So much for getting in a bikini this summer... (ha! like that was even an option...)

-Recruited 2 new doctors in Indianapolis to help diagnose my whatever. I've started some new medications with great  hopes that I will feel better soon. The constant pain and fatigue of my fibromyalgia-type symptoms makes it feel impossible to get anything done. All the bloodwork and tests also make me feel like a lab rat and so far we are nowhere closer to a diagnosis. 

Can you tell they have issues drawing my blood?  They always go for my hand... ouch!

-Finished my research paper that I am presenting at the 40th Annual American Association for Pathologists' Assistants (AAPA) in September!  It will be my first time visiting NYC! 

I will still visit my blog (I think it's about time for a new design, don't you?) and write when I can, so don't give up on me! I also post frequently on Snapchat, Instagram, and Facebook. And even Duke got his own Instagram!! I have a feeling he will be famous before me...
